  3. I really love the astringency of this. Astringency --is that the right word? The way the green and yellow creates a quenching in my mouth like lemon. The perfect physical accompaniment to the glass. Really beautiful.

  4. Thankyou Craig, astringent is a great word.
    I was conflicted about putting another layer on it with some red to make it more palatable, less acidic.
    But I got scared and left it as it was!
